The perfect vegan dish that packs a ton of flavor and is super satisfying. You can easily sub out the Impossible Beef for ground beef, turkey or tofu. This is also the perfect dish to use up any leftover white or brown rice in your fridge. Serve with a side of curry spiced cauliflower and our herb-tzatziki sauce.

Ingredients

1/2 cup Herb-Tzatziki

1 cup brown or white basmati rice, rinsed well

2 cups water

1 tablespoon olive oil

1 small yellow onion
-
2 cloves of garlic
-
3 tablespoons tomato paste
-
4oz Impossible Beef (or ground beef, turkey, pork or tofu)

1 tablespoon chopped parsley
-
1 tablespoon chopped cilantro
-
1 tablespoon chopped mint
-
1 teaspoon ground cinnamon

1 teaspoon ground cumin
-
1/2 teaspoon tumeric
-
2 cups cooked rice (recipe above)
Rice (feel free to use leftover rice if you have it)
Stuffed Peppers
Directions
Rice
Combine the rinsed brown rice and water in a pot and bring to a boil. Cover, reduce the heat to low, and simmer for 30 minutes.
Remove from heat and let sit, covered for 10 minutes
Stuffed Peppers
preheat oven to 350 degrees
heat saute pan over medium heat, add olive oil, onion and garlic and sauté until tender (2-3 minutes)
add impossible beef (or alternative) and tomato paste and cook until well browned (5 minutes)
while "beef" is cooking, take peppers and cut top 1/4-1/2 inch off so that you can remove seeds and white ribs
add herbs, spices and rice and mix together until incorporated. remove from heat
fill peppers with rice and impossible beef mixture and place on a baking sheet standing upright. Bake in oven at 350 for 15 minutes
Remove from oven and cut in half from top to bottom. serve with herb-tzatziki and a side of curry spiced cauliflower
